On Villafranchian clay-limestone terraces, red sandstone blocks well-known in this area. The dark red earth retains the heat, and this benefits the grapes overnight, helping to mature the berries.
The Mediterranean climate benefits from the cooler air of the nearby hills. Located on a south-east facing slope which makes them ideally placed to benefit from the sunshine.
An old Grenache plot where the roots are uneven. (2/3 grey Grenache, 1/3 white Grenache).
Organic agriculture. Work in the vineyard is undertaken with a great deal of respect for the environment, the stock, and the grape. Organic fertilisers make it possible to maintain the microbial life and the structure of the soils.
The bunches of grapes that are chosen primarily for the Hespérides vintage are chosen during the white Althea vintage harvest at the end of August. These bunches (2 to 3 per vine) are left to dry on the vine for 2 months. At the beginning of November, the grapes are harvested by hand, in boxes. The morning dews, typical of this time of year, allow the grapes to decay naturally. After being pressed, fermentation takes place in old casks. The end of the fermentation process and the balancing of the wine happens naturally during its two-year ageing process.
