Acutum

This wine is the result of a rigorous selection of the most concentrated grapes at our vineyard, made possible by the kindness of our harvesters who agree to harvest one plot sometimes up to four times! Elegant and concentrated, with an air of finesse, this wine turns to wood to express all its flavours.

Deep and velvety on the tongue, comprising complex flavours such as cherry, mocha, and blackberries.

Soil Type

Terraces of clay-limestone in which one finds the seams of red sandstone particular to this area. The deep red soil accumulates heat during the day which it then returns to the grapes at night thus helping the development of the berries.

Climate and aspect

The Mediterranean climate benefits from the cooler air of the nearby hills. The vineyards are located on a south-easterly facing slope which makes them ideally placed to benefit from the sunshine.

Syrah 60%, Mourvèdre 20%, Grenache 20%. The grapes used to make this wine come from plots that are mainly made up of old vines. The grapes are picked when slightly over-ripe thus giving an optimum concentration to this wine which is ideal for laying down (ageing/maturing).

The Vineyard

Organic agriculture. Work in the vineyard is undertaken with a great deal of respect for the environment, the stock, and the grape. The natural limitations of the soil mean yields are between 15 to 18 hl/ha. Leaves are stripped from the north side of trailing vines and the soil, subject to erosion, is covered in grass. Organic fertilisers make it possible to maintain the microbial life and the structure of the soils. The balance of biodiversity is paramount.

Winemaking

The grapes are harvested manually in small boxes and are sorted on the plot. After destemming, the winemaking takes place in small concrete tanks of between 30 to 50 hl. The extraction of polyphenols and anthocyanins is carried out by the addition of must and punching the caps of the grape skins. Fermentation lasts approximately 3 to 4 weeks. The aging process is a particular one: using old barrels for the Syrah, sandstone urns for the Mourvèdre and small tanks for the Grenache.

Tasting

Acutum is a wine to be laid down (a “vin de garde”). It is powerful and concentrated, yet smooth.
A smokiness on the nose with flavours of prunes, cherries and zan. It is full and elegant on the mouth, with notes of slightly roasted ripe fruits and hints of mocha.
