On Villafranchian clay-limesone terraces, red sandstone blocks well-known in this area. The dark red earth retains the heat, and this benefits the grapes overnight, helping to mature the berries.
Climate and aspectThe Mediterranean climate benefits from the cooler air of the nearby hills. Located on a south-east facing slope which makes them ideally placed to benefit from the sunshine.
Grape VarietySyrah 80%, Grenache 20%. A small selection of highly concentrated grapes picked at full ripeness from various corners of the vines.
The VineyardOrganic agriculture. Work in the vineyard is undertaken with a great deal of respect for the environment, the stock, and the grape. The natural limitations of the soil mean yields are between 5 and 8 hl/ha. Leaves are stripped from the north side of trailing vines and the soil, subject to erosion, is covered in grass. Organic fertilisers make it possible to maintain the microbial life and the structure of the soils.
WinemakingThe grapes are harvested manually in small boxes and are sorted on the plot. After destemming, the winemaking takes place in small barrels. The extraction of polyphenols and anthocyanins is carried out by the addition of must and punching the caps of the grape skins. Placed in vats for 6 to 8 weeks. The malolactic fermentation takes place in kegs and is aged for 24 months in kegs on a set of relatively new barrels (1 to 2 years of age).
